It has been too long...

since I have shown off my nephew, Ethan. You may remember him from the last time I talked about him. I stinking love this kid.

Which is why we now use Skype. Kyle called the other day to see if we had a camera on our little computer. She said that Ethan had been using Skype to talk to his Grandma and Grandpa C. and his Aunt Marcie. So, we hopped right over to the beloved internet and signed ourselves up. And yesterday, the girls and I got to talk to Ethan for a while (you know, he's really busy and couldn't sit there all day yapping at us). Elisabeth has already asked this morning when she gets to see them again. Perhaps we should have thought of using this sooner. Julia couldn't get over a MOVING Ethan, since the Ethan she is most familiar with is the picture we have on the refrigerator that she carts around a lot.

Of course, now I miss that little red head more then ever. Sigh.

Here is Ethan when he was just a wee little peanut. He was the tiniest thing ever.






He might be gigantic in length, but he's still just a sleepy baby. :(

I may or may not have put some mousse in his hair when I was babysitting him one time. He may or may not have said it was pretty when I showed him in the mirror.

Monday: BBQ turkey sandwiches (with leftover Thanksgiving turkey)

Roasted Asparagus (Yum!!!! I did not share!)

Tuesday: Crockpot Chicken Tortilla Soup
Nachos

Wednesday: Burritos
Corn
Fruit of some sort (oranges? applesauce?)

Thursday: Homemade Pepperoni Pizza
Cottage Cheese

Friday: McDonald's with the girls!!!



This week's menu is a little simple since Evan won't be here Wednesday-Friday. Elisabeth helped me pick things she wanted to help me make, so that's why there's some easy-peasy meals and sides. I've had a few of you ask for recipes from other weeks. If you want them, just email me. I'm trying to figure out if I can make it so I can link the recipes when you click on them. I'm still playing with it. Otherwise, I'm more then happy to email you the recipes, just send me your email. (Oh, and the McDonald's recipe is super easy. You drive to the nearest one and order Happy Meals. So simple!)

Globetrotter

This guy...


is leaving tomorrow for Greenland. Yes, Greenland. And, no, he will not be eating giant turkey legs (though that would make him the happiest).

You see, Evan's office is who the base in Greenland uses for their JAG, since Greenland's base is tiny and doesn't have any permanent JAG positions. So, every now and then someone from Evan's office has to make a trip to either do a briefing or take care of some situation that needs some lawyer expertise. Now it's Evan's turn.

Actually, two Tuesdays before Thanksgiving, Evan called me in the afternoon and said, "I have some bad news." Now, I'm still a bit green at this whole "Air Force Wife" thingy, but I knew that this wasn't going to be good news for me and it was going to be the Air Force's fault. "What?"
"I may have to go to Greenland to deal with a situation."
"Ok."
"Well, the thing is, I'll be leaving tomorrow and I won't be back until next Friday."

Ahh...there it was. I head straight to the calendar, see that there isn't really anything that I needed him for (like a school function or meeting or anything). Then, I completely surprise the both of us. I didn't panic. I didn't whine. I told him that if he needed me to pack him up to let me know, that we'd wait and have Thanksgiving when he got back, and not to worry about anything. I have no idea what turned me into Pollyanna, but I figured, it's his job. There's nothing I can do. Plus, I knew he was super excited to be going to a new country.

Well, there was some issues with whether he really needed to go that soon, whether the commanding officer that he'd be going with would be able to leave immediately, etc. etc.

As you may have guessed, Evan did not have to leave that next day. We were able to have Thanksgiving together and his trip was pushed until tomorrow. He'll be taking the short trip, which means he'll leave Wednesday and be back on Friday of the same week! Love it. I asked him if he felt overwhelmed about possibly having 16 hours before being gone for over a week. He said that once he realized I wasn't mad or upset, that helped him feel calmer. He also said that his boss was nervous about him calling to tell me too, since I'd never had to deal with this before. Remember, I'm still a newbie Air Force wife.

The only thing that I'm pouting about is that he won't have phone or internet access. Ugh!!!! I heart talking to Evan. I like him. How will I complain about his children to him?! But, two days is better then a week or more. So, I'll take it.

I'm going to make him take pictures. They'll be kind of dark, though, since there's no sunlight this time of year. Bleh.
